For the salad
100g Prawns (cooked and peeled weight)
1 Carrot, peeled & sliced using a vegetable peeler
Handful Fresh mint leaves
Handful Fresh coriander leaves
4+ Romaine Leaves, cut into strips
1tbs Red Onion, very finely sliced
For the dressing
1tbs Thai fish sauce
1tbs Lime Juice
Tiny pinch Caster sugar
1tsp Grated ginger
0.5 Garlic clove finely chopped
Pinch Dried chilli flakes
Simply arrange the salad ingredients in a dish.
For the dressing, put the ingredients in a small jar and shake. Use about half of the dressing per person.
