All round perfectly balanced breakfast. This is a Sirt food recipe.
Tastes so wonderful, I carried on making it after following a strict SIRT food plan. Low GI, high in omega 3s and Vit E. Good source of many minerals.
Makes 8/9 portions
20g Chia Seeds
20g Flaked Almonds
10g Coconut oil
30ml Mild olive oil
40g Malt extract
40g Dried Apricots (*see notes below)
Preheat the oven to 160deg. Line a large baking sheet with greaseproof paper/silicon.
In large mixing bowl combine the oats, chia, flaxseeds and almonds.
In a small pan combine the oils and malt extract until warm, combined and pourable.
Add the liquids to the oat mix and mix gently until evenly coated.
Tip the mix on to the baking sheet and untidily spread around.
Bake for 20 minutes.
Let cool in the tray. Chop the apricots and mix into the granola.
Keep in an airtight container.
I do not agree with a constant calorie counting mode of eating, but prefer eating nutrient dense foods that help my body function better. Having said that I lost 7lbs in 7 days eating a similar version of this for breakfast everyday as part of a Sirt food plan. The calorie content per portion is 177. (A portion size is 40-45g). Instead of apricots, substitute the same weight of chopped dates or 70% chocolate.
If you don’t like/have coconut oil, use butter instead.
Can also add 20g sunflower seeds, (after cooling): for extra Vitamin E boost.
